Rhubarb is certainly coming back into style these days and there is no better, fresher flavour than freshly cooked and prepared Rhubarb.

 

The recipe contained in Chefs Corner is for a very simple Rhubarb compote that can be served with yogurt, honey and pomegranate seeds for a healthy breakfast, used as the base for a fruit fool or posset for lunch or a luxury dessert for a fine end to an evening meal to be placed in the bottom of a mousse filled glass to add some sharpness and freshness to any dessert.
